Ambriel Ros© 2014 |
Our Master of Wine has chosen the Ambriel Ros© 2014 for a variety of reasons, including that it is not only wonderful on its own but its fabulous with food, the vines are grown on greensand, which is highly prized for vineyards and only uses Pinot Noir rather than a blend.The Ambriel Ros© has a depth and succulence with a firm core of acidity which nicely balances the nuanced red berry fruit and spice of the Pinot Noir. This is a serious wine, a sipping glass of bubbles, and one that will partner foods very well. The depth and structure will allow this to go with tuna, chicken, and salmon dishes. It can also work with cheeses. He says So, take the plunge and create a supper of Chicken and morels followed by an epoisse and enjoy the Redfold Ambriel ros©.The owners, Wendy and Charles Outhwaite, took five years to find the site, which was purchased and planted to vines in 2006, and now produce a range of fine, award-winning sparkling wine. The 9.5 ha site is quite special in that it sits atop a scarp face overlooking the Downs, and whilst it offers a spectacular view, there are a couple of benefits from the slope and height. Firstly, the south facing slope gives better sunlight, for both warmth and heat, and secondly, the slope reduces the risk of frost.

Barnsole Bacchanalian 2018 |
The Barnsole Bacchanalian reflects the warmth of 2018 and displays green fruits plus some more tropical aromas of mango and pineapple. The palate is dry but has a generous feel, a rich dryness and lingering finish. It goes extremely well with Chicken and Fish curries.The white wine is grown on a boutique vineyard by two passionate winemakers near the town of Sandwich. Their philosophy is to tread softly in the environment and to share the land with the local hares, badgers, foxes and many British birds. The first vines were planted in 1993.

Chartham Bacchus 2018 |
Our Master of Wine was incredibly excited by the Chartham Bacchus due to its high quality, the expressive aromatics and bright freshness of the palate. The Bacchus grape will always deliver acidity and aromatics and he felt that this was at the more floral end of the aromatic spectrum so great for lovers of Sauvignon Blanc.It is a superb aperitif but it will partner a range of lighter dishes. One of the best combinations is pairing Bacchus with a light goats cheese of curd. Find a youthful goats cheese, creamy and smooth, add to a green salad with a little walnut oil dressing, some fresh crusty bread or toast and enjoy the fresh wine cutting through cheese and enriching the flavours. Overall a great springtime wine!

Davenport, Limney Estate 2014 |
The Limney Estate 2014 is a vibrant organic English Sparkling wine, created with a blend of Chardonnay (50%), Pinot Noir (26%) and Meunier (24%). The wine undergoes a long ageing on the lees before released and so has a terrific autolytic depth and is a rich, dry flavoursome wine. It is certainly an individual style and not a simple wine. There is complexity and texture, length and balance in this characterful wine.One of the key reasons for our Master of Wine to choose the Limney Estate 2014 is the length on the lees. One of the major factors in determining the quality and style of a traditional method sparkling wine is the length of time on the lees. Many wines are made with 18 months in contact with the lees, in Champagne the minimum is 15 months, in order to allow the break down of yeast cells and the development of flavours derived from yeast. This development of yeast characters is known as autolysis. High quality, traditional fizz will usually undergo a long period, at least 24 to 30 months on the lees. Increasing the top English sparkling wines have extended periods on the yeast. The Limney Estate wine has five years on the lees, resulting in a richer autolytic character and also a better integration of the acidity and development of fruitThe Limney Estate is owned by Englands leading organic wine producer, Will Davenport. The first vineyard was planted in 1991 at Horsmonden, Kent and, as the operation developed, Will moved to a winery over the border in East Sussex at Rotherfield. The fruit comes from vineyards around Horsmonden and Rotherfield. Today, the vineyards cover 24 acres of land and grow vines for both still and sparkling wine. The vineyards were converted to organic farming from 2000 and all the wines are now certified by the Soil Association.

Exton Park Brut Reserve NV |
The Exton Park Brut Reserve is a wonderfully refreshing wine rounded with a gentle foaming mousse and apple, citrus and light red fruit notes. It is a multi-vintage wine blended from Pinot Noir and Chardonnay. The blend is generally 60% Pinot Noir and 40% Chardonnay and the resulting wine has a wonderful tension between the fresh acidity and biscuit richness on the palate. It is a great aperitif and will partner many canap© style dishes. It is also a partner for poached or steam salmon, the acidity of the wine cuts through the richness of the fish, the citrus notes highlight the fish flavour and the toasty character adds an umami savouriness.

Hush Heath, Nanettes Ros© |
We are absolutely delighted that we have managed to secure the last few bottles of the vintage before the winery moves on to the 2019. The Nanette Ros© is a blend of several grapes each of which contribute to the final wine. The varieties used are Regent, Pinot Noir, Pinot Meunier and Chardonnay. The Regent is a useful wine for delivering colour, the Pinot Noir for red fruits, the Meunier gives an apple notes and the Chardonnay some citrus characters. The wine is dry and fresh with a gentle fruitiness. Whilst this will suit as a fine drinking ros©, served at 8C, it will be a good wine for food served a little warmer, 11 to 12C. It is a lovely wine to partner seafood such as prawns, lobster and crab; Nanettes is a cracker with the iconic and newly revived prawn cocktail. The red fruits partner the sauce and sweetness of the prawn and the lightness of the wine will not overwhelm the dish. Alternatively, if you like a spicy curry, chicken, fish or vegetarian this style of wine is always a winner.The consultant winemaker is Owen Elias. Owen is something of a legend in the UK wine industry. He has worked at numerous vineyards and established the wines of Chapel Down as amongst the best in the country before moving on to Hush Heath

Kingscote Sparkling Brut 2018 |
The wine is a fresh, aromatic dry sparkling white. It possesses aromas of fresh grapes, gooseberry and grass appetising and sapid. The palate is dry, fresh and lively with a bright mousse. Whilst dry, the wine is not tart or sharp but refreshing and clean. It makes a super aperitif or easy drinking sparkling wine, more interesting and more deeply flavoured than a Prosecco yet not a sharp and austere as some Champagne.This vineyard is in West Sussex to the south east of East Grinstead , not far from Weir Wood water and the upper reaches of the River Medway. The estate has a long history dating back to the early 14th century, however, the story of wine production dates back to 2010.

Oxney Sparkling Ros© |
The Oxney sparkling ros© is a delicious, fresh, dry, gently-foaming wine. One can find delicate aromas of raspberry, peach and lemon on the nose and palate along with a light lees richness. The wine is bottle fermented and has extra weight due to the extended lees contact but is made to give a fresh, youthful mouthful. It is a great on its own but will match a range of canap©s as well as fish dishes.This organic estate is East Sussex, between Rye and Tenterden, is one of Englands most southerly vineyards and one of the few which is run on organic principles. The soils are of sand and loam over a clay subsoil. The upper levels of the soil are therefore free draining and poor in nutrients whilst the clay below can hold water in the drier months of the year.

Simpsons Railway Hill Ros© |
The Simpsons Railway Ros© is made from Pinot Noir and delivers gentle notes of raspberries and wild strawberries, alongside pear and fresh bread. The wine is dry with fresh acidity, nicely integrated delivering a wonderful cut to the textured palate. The wine has a bit of attitude and character with layered fruits and textured weight. It is a great food wine for heavier fish or white meats. The Ros© is created by a husband and wife, Charles and Ruth Simpson team learnt their trade and gained their deep knowledge of winemaking in the Languedoc region of France. To add to their French vineyard, they bought perfect wine growing land in a sheltered chalk valley in an area of outstanding beauty just south of the Cathedral city of Canterbury. They are passionate winemakers and this is reflected in the quality of their wine.

Stopham Pinot Gris |
The Stopham Pinot Gris had a lovely bright feel to it and has an aromatic quality, with some lifted floral notes and a grapefruit zing. It is an atypical Pinot Gris but a wonderful one. The reason for the unique nature of the Stopham Point Gris is that a small percentage of Bacchus has been blended in. This has added complexity and structure. The marked acidity of the wine is balanced by a small amount of residual sugar (7g).The hint of sweetness and aromatics make this a super wine to match Thai or lightly spiced oriental fish or chicken dishes.The Stopham Estate is the brainchild of Simon Woodhead, who began his career as an engineer designing parts for Formula 1 cars. Simon established Stopham Estate in 2007, when he planted six hectares of predominantly Pinot Gris and Pinot Blanc on the estate, near Pulborough in West Sussex. The vineyard is a single block on a gently sloping, south facing slope and the soil type is sandy loam.Simon practises sustainable farming and is aided by the south-facing vineyards, which maximise sun exposure and ripening, as well as the proximity of the Stopham farm animals, which provide copious amounts of organic fertiliser to boost the sandy soils. The manure helps to create a better soil structure and retain some moisture on the free draining soils.The wines are all vinified on the estate by Simon and Tom Bartlett. They aim to produce wines of interest, structure and balance. The still wines deliver a wonderful purity and freshness when young and develop a more savoury note as they age.

Westwell Pelegrim Sparkling Wine |
The Westwell Pelegrim Sparkling Wine has a rich, biscuit nose and plenty of autolytic notes which promise a savoury complex palate. In the mouth the wine certainly delivers layered flavours, both apple fruit and savoury nut and bread characters. It is dry, gently foaming and has mineral depth. It drinks well now but has the concentration to reward cellaring for two to three years. Perfect with salmon and chicken and great for an aperitif.The Westwell vineyard is based on the gentle chalk slopes of the scarp face of the Downs, which receive increased insolation and reduced frost risk compared to the generally flatter lands of the Weald so the fruit is usually that little bit riper. The top layer of the chalk soils contain plenty of flint which helps with drainage and makes it a bit warmer than the nearby clay rich soils of the Weald.
